The owner of the Brown Derby restaurant, Robert Cobb invented this salad when a friend dropped in one night and asked if Robert had anything to eat. Mr. Cobb went to the refrigerator and used what was available to make the now famous deconstructed salad. You don't have to hold fast to this recipe, Mr. Cobb would be fine if you made any substitutions you'd like. - Jughandle
"Wedding" soup in the title is a misnomer. The name is derived from an Italian phrase that meant the vegetables and the meats wedded nicely together. This is a hardy, great tasting soup, good for a meal. - Jughandle
The tang of the lime, the spice of the peppers, the crunch of the toasted tortillas combined with the warmth and comfort of the chicken and stock make this a top 10 soup/meal any time.- jughandle
This is my Grandfather's recipe which was brought over from Germany by his parents in the late 1800's. Gran-daddy made this salad every time he visited. Note that the calories are pretty low for a potato salad. It doesn't have mayo in it.
With any satisfying meal it is important to not only have good flavors, but combine different textures and even different temperatures. The crunch of the pepper with the mouth texture of the quinoa and the spice of the tomato mixture and topping provide depth of flavor, texture and spice that is hard to find in any dish. For a whole meal serve with a cold tossed salad. This recipe is an original Fat Farm creation. Let me know what you think. - jug
