Recipe – Arugula Salad with Beets and Goat Cheese

Arugula is on of my favorite greens.  It has a peppery flavor and tastes a little like bacon to me.  It is great alone or as a mixed green in a salad.  I add it to sandwiches for that extra kick or a secret flavor.  Top it with goat cheese and bingo bango bongo, you have a great salad.

  • Assemble the salad according to how much you want. A handful of arugula leaves, a few beet juliennes, some crumbled goat cheese, garnish with chopped walnuts.
  • Dress with the vinaigrette
