- Heat the oil in a large skillet over medium-high heat.
- Add the tofu, chili powder, ½ teaspoon salt, and ¼ teaspoon pepper. Cook, tossing occasionally, until golden brown, 4 to 5 minutes.
- Add the corn. Cook, tossing, until heated through, about 2 minutes.
- Add the spinach and ¼ teaspoon each salt and pepper. Toss until wilted.
- Fill the tortillas with the tofu mixture, goat cheese, and salsa.

This sounds delicious! I’m gonna give it a try as soon as I can get my hands on some tofu. Not an easy task here in Albion. Dang! I was at Trader Joe’s in Lincoln today, but I hadn’t yet read this recipe. I did pick up some Trader Joe’s canned sweet corn, so I do have that on hand…. You know, with the corn, this will be great fall football food.
Oh good, I’m glad you think this is a good recipe. Trader Joe’s corn is the best corn I’ve ever had with the exception of fresh. I can’t believe it’s so hard to get tofu there. Thanks for the comment. – jug
